Here is a recipe for caramel sauce you can make yourself, that is great for ice cream sundaes. I think it tastes much better than the caramel ice cream sauce they sell in the United States and it's really quick and easy. It also makes a yummy coffee sweetener.
Caramel Sauce
1/2 cup packed brown sugar (I just use the regular azucar moreno they sell in Mercadona)
1 tablespoon cornstarch
1/4 cup water
1/3 cup cream
2 tablespoons corn syrup (you can buy corn syrup at the Corte Ingles gourmet shop at the C/Colon, although this is what I do: take two heaping tablespoons sugar and put it in a small glass bowl. add just enough water to moisten all the sugar. microwave on high for a minute or so until all the sugar is dissolved, stirring or shaking the bowl from time to time. you can add this directly to the recipe without measuring it.)
1 tablespoon butter
1/2 teaspoon vanilla (the imitation stuff they sell at Carrefour works fine)
In a small saucepan mix together the brown sugar and the cornstarch, stir in the water and then the cream and the corn syrup. Cook and stir till bubbly and then continue to cook and stir two more minutes. Remove the saucepan from the heat and add the butter and vanilla and stir until the butter is melted.
